200 g walnuts, ground up finely
150 g caster sugar
large heaped tablespoon cocoa
250 g mascarpone
2 teaspoons vanilla extract
300 g chocolate (300 g dark, 100g white)
Line an 18 cm round tin (yes I know it looks too small)
Heat the over to 140 fan assisted (160C, 320F GM 2.5)
Mix the nuts, sugar and cocoa together.
Beat in with mascarpone, eggs and vanilla.
Melt the chocolate and stir into the mix. Spoon into the tin and smooth the top.
Bake for about 75 – 90 mininutes until it has evenly risen but still has a hint of wobble. remove from the over and allow to cool completely.
This is very rich and both astonishingly good and astonishingly calorific.
