Hummus

The best that can be said about this recipe is that it’s quick and it tastes like really good hummus but remember it’s only hummus. Ignore anyone who tells you to make it by hand – a food processor is fine. If you want to boil your own chickpeas from scratch also fine though I have never been able to taste the difference.

1 large tin chickpeas, drained & rinsed
2 – 3 cloves garlic
4 tbsp tahini
juice from 2 lemons
good olive oil
paprika/sumac

Puree the chickpeas in a food processor until fairly smooth. Add the garlic and tahini. Blitz again. Add the lemon juice. Blitz and taste. To loosen the consistency if required, add a little water/more lemon juice.

When you’re happy with the taste and consistency, serve on small plates with pitta. If liked, top with good olive oil and a sprikling of paprika or sumac.

You can play around with the recipe by adding in roasted red pepper, chilli flakes etc
