Blue Cheese Soup
1 onion peeled & chopped
3 celery sticks chopped
oil to saute
1 tbsp plain flour
1/4pint white wine
1 pint vegetable stock
300 ml milk
1 bay leaf
1 apple, peeled and chopped
75g blue cheese
Saute onion and celery. Add flour and stir over gentle heat for 1 min. Add wine and stock and heat until thickened. Add milk, bay and apple to the pot. Simmer for 30 minutes.
Blitz in processor until fine. Crumble in cheese and serve warm.
Tomato and Orange
1 onion peeled & chopped
1 large carrot chopped
1 large potato chopped
oil to saute
2 lb tomatoes (tinned or fresh depending on season)
1 1/2 pint vegetable stock
Orange juice to taste
Saute vegetables. Add tomatoes and simmer for 30 minutes.
Blitz in processor until fine. Stir in 1 -2 tbsp orange juice to taste.
