1001 things to do with puff pastry
1 pack ready rolled puff pastry, preferably all-butter though jus-rol is suitable for vegans and tastes okay
Unroll onto a lined baking tray. Score an edge. Glaze with egg (unless feeding vegans) and grind some salt and pepper on top. Prick out the central portion before filling (see below).
Bake at 220C for 10-15 minutes until puffed up then lower temperature to around 150C until dry. Remove from oven and allow to cool before transferring to a flat platter to serve.
Toppings:
Pesto & Fresh Tomato
6 tbsp pesto (about a full pot of preprepared)
Cherry or baby plum tomatoes, halved and sprinkled on top of the pesto base layer
Leek and Stilton
4-5 leeks, sliced and fried until soft but not browned with a good amount of thyme
slices of stilton to lay on top of a leek base layer – be generous
Roasted Mezze selection
Good things left over from mezze the day before can be used to make a tart.
Base layer – either pesto, houmus, basic tomato sauce or splodges of cream cheese
Top layer could include roast vegetables like aubergine, tomatoes, artichoke hearts, olives
