Aloo Papri Chaat
Potato Salad:
1 onion, diced
1 tsp cinnamon
3 large potatoes, peeled and chopped into bite size pieces
Fry the onion with the cinnamon until soft but not brown.
Boil potatoes until just tender and add to the frying onion. Mix until combined but still with shape (not a mash). Transfer and leave to cool in a large, shallow serving dish.
Add the tamarind sauce on top:
Combine in a jug,
1/2 pot tamarind paste
1 tbsp tomato puree
1/2 tsp ginger
1/2 tsp chilli
1 tbsp sugar
Add on top the yoghurt sauce:
Combine in a jug,
1/2 large pot of natural yoghurt, thinned with 1-2 tbsp warm water
1 tbsp sugar
1 tbsp salt
And finally,
Toppings:
Pomegranate
